the sale of typical products of our own production, it is an educational farm and a tourist farmhouse.
The surname Gruden has been present in the Karst for more than three centuries. Zbogar, on the other hand, is our current surname, and together they represent tradition and the modern day. Our story started forty years ago, with the desire of our family to return to its origins, to return to using this land which can give so much if we respect it, as our ancestors did.
There is nothing to invent,
we only need to restore the right balance to nature and to human work.
We started with the intention of returning to breeding goats, cows and pigs, thinking of turning their milk into cheese. We go back to the ancient tradition of transhumance, between Friuli (winter) and Postumia (summer), where the Karst was crossed, both there and back, by expert cheesemakers from whom we inherited our enthusiasm for cheesemaking, to which we dedicate ourselves with passion.
Our Crudo del Carso ham bears witness to the fact that our ancestors knew how to enhance the aromas of meat with the right foods. In the cheeses we have chosen to research the aromas and flavours of goat's milk and cow's milk separately, producing more than twentytypes of cheese, both fresh and seasoned. We have taken over and enhanced the production of traditional cheeses, such as Tabor (cow) and Nanos (cow and goat), succeeding in conveying the sensations of the aromas and flavours of the herbs of the Karst.
The farmhouse offers hospitality and typical Central European cuisine, dishes which are inspired by Austrian, Slovenian, Italian, Balkan and Mediterranean traditions.
On the farm we produce Vitovska and Terrano, two characteristic wines of the region. We also offer various combinations of these wines with typical dishes and products.
We offer stimulating learning and didactic opportunities, we have specially created the "Tre tigli" Educational Farm with workshops for children and students.
