VITOVSKA AND TERRANO

VITOVSKA


Vitovska is an ancient, autochthonous, white-berry vine which has always been present in the Karst. A vineyard which offers hardened grapes, which over the centuries has managed to resist and acclimatize in our land, a land of hard contrasts. The wine is straw-yellow in color, sometimes with characteristic golden reflections. The scent has delicate hints of hay and wildflowers, sage, citrus fruits, Williams pear, with a hint of flint. The freshness of the wine is felt in the mouth, it offers salty, mineral, savory notes, which close off with slight almond hints. It has good acidity, is a long-lived wine, appreciated as an aperitif, versatile, it goes well with light fish appetizers, seafood first courses, delicate white meat main courses, fresh cheeses.


TERRANO


Terrano is a wine which we produce in the Karst, a wine with an intense bright ruby color; it is full-bodied, dry, slightly acidic. A fruity wine, with robust taste, a nice scent of wild berries. The land of the Karst, with its iron-rich soils and unique climate, allows these grapes to remain healthy. The grape skins are rich in anthocyanins and tannins, powerful antioxidants which a beneficial effect on health (the beneficial properties of Terrano were already known since the times of the ancient Romans). The high iron content makes this wine perfect for anaemic people. Terrano goes well with Karst ham and cured meats, with strong spicy cheeses, red meats and game.

VITOVSKA 2017

AT AMBIENT TEMPERATURE

Straw-yellow color with golden tints.

On the nose mineral with karst grasses, savory, wisteria and lavender.

In the mouth sapid, fresh, long and corresponding light tannins, deriving from the 48 hours of maceration, which dry well.

Recommended pairing with tabor.



VITOVSKA 2017

COLD

The scents fade and increase the acidic sensation, leaving an almond-like scent in the finish.

Recommended combination with mandira.

You could also consider an aperitif with Vitovska on the rocks and cheese.



TERRANO 2017

AT AMBIENT TEMPERATURE

Beautiful ruby red with violet reflections

Hints of mulberry, pepper, fresh grass, blueberry, hot stone

In the mouth fresh with cyan tannins, beautiful long, sapid, slightly soft. The spicy sensation of pepper makes you salivate and hangs around.

Perfect match with the mandira cheese.



TERRANO 2017

COLD

It increases the sensation of freshness (acidity) and tannins.

No matching with cheeses recommended.



OLD GOAT'S CHEESE OF SAMATORZA

FROM 6 TO 10 MONTHS

Citrus scents of orange and tangerine, walnuts and hazelnuts, hazelnut butter, peanut butter.

In the mouth fresh, soft, very long, a slight bitter taste remains in the end, from grapefruit.

The only recommended combination with Terrano 2018, it needs softness and lots of aromaticity.



SAMATORZA TABOR COW'S CHEESE

8 MONTHS

Raw whole milk.

Hints of milk, bread and Karst lands.

In the mouth fresh, beautifully soft, very complex but elegant.

On the aftertaste same hints of the nose.



MANDRIA COW'S CHEESE

10 MONTHS

Raw milk without cream removed for surfacing.

Hints of hay and light hazelnut.

Lightly spicy and crunchy with tyrosine particles which crunch in the mouth.
